Jam: Apricot & Thyme, 2 jars

This jam from Nicolas Vahé is the perfect companion for a cheese platter. It was originally developed to accompany the Chaource cheese from the Champagne region, but also goes perfectly with any other type of cheese. The one of a kind taste is due to the fact that the apricots are infused with thyme for at least 10 hours. The apricots are a wonderfully light balance to spicy cheese varieties. So serve the jam together with a cheese platter the next time you have guests and impress them. You can even use the apricot-thyme jam as a chutney substitute.
